Do not expect the best of French food on a cruise. Also, you could miss seeing a lot of details because you are busy with dinner. Why not take a cruise and enjoy the sights and then go to a wonderful dinner? Double the ambiance and much better food.
The perfume factory is on the same road as Eze Village and just a few yards down the hill. Eze is at the highest point and the road goes down hill.Use Google maps.
Ask the tour operator which hill. I doubt it is the Nietsche trail. There is a parking lot by the perfume factory that is also "down the hill" from the entrance to Eze.

As for sardines, they are practically the national dish of Portugal and practically every restaurant serves the traditional fried sardines plus some variations. Favor mostly seafood restaurants so you can also try other great seafood. Just walk down the street and look at the menus. Look at what people at sidewalk tables are having. Can't go wrong.
You should miss going to the beach. In March the water will be frigid and beach facilities will be closed. The Med is not the Caribbean. Barcelona is about the same latitude as NYC.
Last year inRome, we also had an early arrival and we decided to tour the Colosseum the same afternoon. It kept us in the sunlight and active for the rest of the day.

Consider the Castelli Romani area just outside Rome. It has beautiful views (Lake Albano, hills), towns, wineries. Some of the towns are Frascati (wine), Castel Gandolfo (Pope's summer palace), Ariccia (where bruschetta originated), etc.
Rome in Limo can create a custom tour for you. Cruise tours never go there.
That is true for foreign ships wanting to cruise in only one country. Domestic ships can sail exclusively in their country. So, if you are looking for a Greece only cruise, sail a Greek cruise line like Celestyal. Check them out. It could also be less expensive. And they may be allowed to dock in the ferry port in Santorini - no donkeys!
Santorini is the island. Oia is a town. Yes, the ferry only takes you from the old port of Fira (cable car port) to the port for Oia. Why? They are splitting the income opportunity with the cable car people. Boat one way, cable car back.
