This menu is misleading - it does not show the offerings that change daily. That said, your husband needs to contact the dining room as soon as you board and inform them that he is vegetarian. My vegan wife is usually very happy with the offerings they will put together.
Lots of theorizing, but I'm yet to see where anyone talking about the "lines" has provided any evidence that there has been a substantive wait for a table.
Many Caribbean cruises have two sea days at the end, so EC is typically on the first one, because the cruise ends after the second (last nite)---but this cruise is unique with Nassau on the last day. I'm just theorizing EC will be on the FIRST of the 2 sea days. Hey, we'll find out soon when the app updates the Cruise Planner.
Big picture---there are 10 starters (down 1), 9 entrees (down 2) to choose from. FYI, here's the Apex menus from the start-up in July '21.

The 31st is also a sea day, and the 2nd is Nassau. I'd rather have a full day/evening at sea to recover from the Chic nite debauchery 😉 before visiting Nassau.
