Seriously I don't think there was anything resembling a smoker in the galley so I am guessing its braised and sauced.

 

I'm sure Princess has this on the HC menu sometimes.

 

Does anybody know what type of smoke they use? is it hickory or maple or something else?

 

Someone out there has to know.
