Fridge is not stocked. You can order from room service and they will stock it. They charge you when delivered. There may be some bottles of water on top of the fridge or on a table. These are not free. If you use one they will charge you. The ship's tap water is really fine to drink. Just bring a refillable bottle(s). You can keep them cold in the fridge. You really don't require a cooler. Some fridges are colder than others. On our last cruise the water in the fridge had ice crystals in it.

Ours have been stocked with a small selection of sodas (like, three cans) and a large bottle of water. We don't typically buy these so we place them behind our TV until we disembark.

 

ETA: We aren't Elite and we don't travel in suites, so the setup will probably vary if you are either of those.

We have been on several princess cruises where we found a few sodas and bottles of water (unopened) in the frig / cooler. The Room steward said they were from previous cruisers and we were free to use them. It just so happened that we had brought some sodas and water of our own, so at the end of the cruise we just left everything in the frig / Cooler. The room steward did get an extra tip because he did try and help us out.

I used to do that too but one time we were charged for the pop! Our room steward was off one day and the replacement put the charge on ( guess he didnt see them behind the tv) or so we were told. Once i brought to passenger services attention, the charges were removed.
