Anyone ever notice this on the Caribbean Princess?

I've seen it. The top Sky Deck is a listing for Skywalker's, which has no direct elevator access. Instead one goes to a lower deck to get to the escalator which leads to the Skywalker's Lounge.

I thought it strange until I recognized the geometry involved.

DH explained just that to me once. I told him it still made no sense. LOL. :)

My granddaughters got quite a laugh when we discovered this sign. If it's too small for you to see - it lists two Sky decks!
Deck 16 is the Sun deck, not the Sky deck. Just a typo. Wonder how many people looked at that sign until you pointed it out here?

Looks like a simple typo. The signs that puzzle me are the ones that state "you're here." How do they always know where I am?

Take comfort! At least "they" always know where you are even if you don't.

Maybe, but our cabin was on the aft of the ship, so I'm pretty sure that this was on the back elevators that actually have two elevators that take you up to the Skywalker's escalator. And even if it wasn't, why would it not say Sun?
