I always travel solo, but that has never stopped me from going to any of the specialty restaurants on any line. The service is usually very good as the waiters and waitresses don't care if you are with someone or alone. I would definitely give them a try. Happy sailing, and I hope you enjoy your cruise. Service has always been great if not better than the dining rooms. The waiters seem to pay a little bit more attention to you which is nice. I'd rather go with someone, but I'd rather go alone than not go. I usually have my phone with me to read or play scabble on, etc., just like I would in any restaurant if I were alone.
