Where can I find a breakdown of the main dining room schedule?

Good luck. While there are similarities in all cruises, there are no guarantee as to formal nights and menus.

Formal nights are frequently on the second and sixth nights of a seven night cruise. Formal nights are frequently on sea days, but not always.

Lobster, beef Wellington are almost always on the second formal night.  First formal has medallions of beef and other things.  Search for menus.

Yeah, sorry. We are leaving January 20 hitting Princess Cay, St Thomas, and St Martin.

Formal nights should be Tuesday, 20th and Friday 25th. Normally lobster tail is offered on the last formal night. MDR menus are posted each morning on the wall by the DR's. Every MDR has the same menus.
