We live in CA and wine taste often. IMO, Carnival’s wine list is meh at best. You just might enjoy hitting a Total Wine at home (if you have one nearby) and buy two very nice bottles on their recommendations and bring them on board as your two free allowance. We do this and then fill in whatever we want/need while cruising and in port (drink, not bring aboard).

I'm from California too and very close to Napa/Sonoma.  Based on my experience with tastings and wine flights, the Carnival steakhouse pairing is not worth it.  Of course, this is all subjective but if I were you, I would order a glass (or two) of your choosing and go with that for your entire meal.

Love your self imposed nickname, I resemble that remark.  Carnival used to have Sommeliers in the Steakhouse, but that ended a good while back.
