According to the Papeete airport site, wifi is available but there is a charge after 15 minutes. Getting in touch with tour providers, especially since most of the ports use tenders, is a concern. We used Tahiti Wifi and it was wonderful for most of the islands. But weak or no service in Nuku Hiva and Raiatea. Reasonable prices and it was discounted online when we booked. You'll find that the tour providers know that not everyone arrives off tenders at the same time and they will wait for everyone to show. With the exception of Papeete the docks are so small that you should have no difficulty finding your provider.
