Depends. One per person ...how many booked.

we have a few from a number of cancelled cruises - had hoped I could apply multiple to a cruise we have booked next year

I have had two FCC's in my name applied to a single sailing (traveling alone). You may have to call. It's considered "stacking" credits, and is only available for FCC's issued related to COVID-19. Specifically I applied one FCC I received of 50% of my original cruise fare for a sailing on Anthem that was reduced from 8 to 5 days, at the beginning of the pandemic, and another certificate issued to me for 125% of the cruise fare for a sailing that was canceled.
