Dressing for Dinner

We are wondering what to pack as far as dinner clothing. Do people dress up; ie. Jackets for men, dresses for ladies in the evening, or is it casual wear at night as well? We will be on the Countess in August.

We have not been on the Countess, but on the American Queen dinner was much more casual than any cruises we had been on before—-ocean or river. 
Men wore sport shirts, no jackets. Most of the ladies wore slacks and blouses, maybe a few wore skirts or dresses.
