There are shortages due to reduced output from some farms and processing plants - as well as issues in transportation/shipping. My sister-in-law is the Food & Beverage manager at a golf resort - and our future brother-in-law is the general manager there. They have issues in getting certain supplies, as well as higher costs for what they can get (food items and other supplies) - and trouble keeping a full staff. Both are real problems across the food and beverage industry. I don't know if this is why the mushroom soup disappeared - along with other favorites - but it could be tied to either shortages or higher costs (or both).
