a 10:00 flight out of Rome too ambitious time wise?

Yes. Far too ambitious. Docking at 5am doesn't mean getting off at 5:05. FCO (Rome airport) is notoriously slow...so, if you are flying direct to the US, you need to be there 2.5-3 hours in advance. Its an hour drive port to airport.

 

What happens if they change your flight earlier, which seems to happen more often than making it later.

Smart move. 1:00 is far more doable. 

 

FCO airport is still extremely crowded, even with COVID (and COVID procedures may even have slowed things down more....)  I would not risk a 10:00 am flight.

Celebrity has allowed us (via "Flights By Celebrity") to book an 11:30am departure from FCO... I wonder if we are supposed to use their transfers for this or if it is ok to do our own?

Its OK to book on your own. You will move along faster on your own than via cruise line transfers.

We have an 11:30am flight booked by FBC to return to the US.  We decided to take a private car (via RomeCabs) from the Civi port to FCO.  The only Celebrity post-cruise transfers I saw on their web site were designed for late-afternoon flights and included a brief sightseeing visit to Rome.

I have a 10.50 Lufthansa to Munich booked (in Sept). The travel agency said these are still ok times to book according to the cruise lines. And this is actually one of the Celebrity deals where flights are included so it shows as a Celebrity addon on the invoice. Planning on getting on a shuttle/ride at 8ish to be at FCO at 9.
