how important is it to book tours in advance. Do they sell out or can you wait until the cruise to book them? When I read through them sometimes it is difficult to decide what I would want to do.

Yes they can sell out and yes you can wait until you’re on board to book. If there is something you see that you’d really have your heart set on doing, book it in advance. Once on board, you can also be added to a wait list for a sold out excursion.

I think it can depend upon your destination as well. The Alhambra tour sold out before we set sail but I had read that one had the tendency to do that so we had signed up ahead of time.

You also can cancel and change when on board - within the time limit.  I've seen the tours tend to be higher priced when on board, only known since I took the list I'd downloaded from the website before the cruise and the brochure in the cabin had higher prices.

Know your port before you go. Get info and maps. Ship isn’t good at providing info.  Many excursions were canceled. Don’t know why.  Be prepared to do ports on your own.
