If driving I suggest staying somewhere else in Kent and doing the last part of the journey the day of the cruise.  Dover not the best place to stay.

Dover is a working port,.  Aside from the castle, there is little to interest visitors, it's not somewhere I'd choose to stay.  Canterbury is very near and a much nicer option.

We stayed in London and took the high speed train that morning. Very easy. Total transit time was about two hours. We took a taxi from the hotel to St Pancras Station, then a shuttle bus from Dover Priory to the ship.

For one night the Premiere Inn or Best Western are reasonably priced and comfortable.  There area number of decent restaurants near both.

I took National Express to Dover Ferry Terminal then a taxi to the hotel.  I stayed at Premier Inn Ferry Terminal in Dover.  A short taxi ride to the dock the next dock. Ask the hotel to prebook a taxi for the next day.  There is a bar and restaurant in the hotel.  If you walk through their parking lot, you are at the water front.

 

If visiting the Dover Castle, take a taxi and ask for taxi phone #  or set a time to return.
