Some take shortcuts, like a quick shake and pour. Some are too heavy or too light on the vermouth. Some might give you multiple olives, others just one. It does make a difference which bar and bartender you go to. I like Mai Tai's made a specific way, so I go out of my way to find the bartender who makes a perfect Mai Tai to my liking. And martini-like drinks there too.
