On our last cruise, at Vines on the first day the bartender poured wine into the bar's glass and then poured into my own glass so that he could see whereabouts his standard pour should settle in my larger glass. Once he had that calibrated, he poured the remaining 30 or so glasses directly into my glass for the remainder of the cruise. Because building a cocktail is a bit more complex, I would expect them to build it in their own glass as they are most familiar with ratios and volumes based on that vessel, and then pour it into your glass after it is finished.
