  1. I'm kind of lost on the toad in a hole. Is that a food? The mammogram results came back as boringly normal. Too much garlic? Is that even possible? @kochleffel I've been meaning to thank you for all of your explanations of Passover and the rituals involving food. I find that fascinating. I also appreciate the humor you employ in your descriptions. Putting the dishes away could get fun, but expensive after a while!
  2. Do you think it may be that the flavor is quite intense in a pesto? I've also had sun dried tomato pesto and I love it. I'm going to have to try the grilled cheese with the mayo. Sounds really good!
  3. Good morning, everyone! It will be another warm, sunny day here in mid-Michigan. I'm doing some much needed yard work. The previous owners just threw stuff in the "wild zone" and left it to rot. Or not rot. So far I've filled up 5 yard bags with debris. Some of it will have to go directly to the landfill or go out in large item pickup. We cleaned out the area where they dumped their kitty litter. What a mess! I have a mammogram scheduled for this afternoon. I'll be glad when that is over. I can give them the results: Normal. I like grilled cheese on occasion and my nephew is a lawyer. We like to think he's one of the good guys. Today's meal sounds good to me! This first one combines shredded rotisserie chicken with zoodles and the arugula pesto.   5. @JazzyV I sure hope they can identify and fix the problem with your knee whether or not there is a cruise coming up, but especially because there is a cruise coming up.   7. Good morning, everyone! It is going to be another beautiful day in mid-Michigan. Sunny skies and a high of 74F. I'll take it! I'm up early today because the bug guy is coming. Sue saw a spider in the house and lost it, so we will have pest control on a regular basis. I want it more as a preventive measure against ants and other critters. They can have the yard, I want the house. I once had an 8 track tape player. We thought it was wonderful to have them in the car. But the tapes took up so much room you needed a trailer to haul them along. Now, I have the music I like on a flash drive and just plug it in. Amazing when you think of it. Today's meal is a tasty one and there could be so many variations. If you don't want the spinach, use mushrooms! You can also substitute the cheese if you like. The idea of this meal is a stuffed chicken breast. Stuff it with the things you like! Most of the recipes were similar with slight variations on seasonings and preparation.   8. Since today is National Siblings Day, I thought I would share a couple of pictures with you. The first is me and my sisters on Easter Sunday many years ago. My dad's caption on the photo was Four Texas Beauties. We were living in Lake Jackson, Texas at the time, so it was probably 1962. Yes, I am the one hamming it up. A couple years later we were back in MIdland, Michigan and brother Bill was old enough to join us for the Easter photo. Bill is showing his better side. The last one is all of us on a fall day in the front yard. That is me with Jeff in my lap.
  9. Good morning, everyone! It is shaping up to be another beautiful day here in mid-Michigan. We have sunny skies and we'll be flirting with 70 again today. I'm looking forward to my morning walk in the milder temperatures. Yesterday Sue and I took advantage of the nice weather and did a lot of clean up out in the yard. There is still more to do as we found where the previous owners were disposing of their kitty litter. Apparently, it went in the back in the same pile with everything else. We made a good dent in that and it won't take too much more to finish the job. Maybe this afternoon. Today's meal reminds me of a dish that was made for me in Spain. I was living with a Spanish family Gloria used to work as a cook in a restaurant. Oh, what luck for me! She made shrimp and avocado salad and served it in the avocado halves. The nice thing about this dish is that it is versatile. You could use chicken if you prefer. Leave out the cilantro for those who can't eat it. If you don't like avocados, well, that is another issue. But, they are so good for us.   10. Good morning, everyone! Today is full of festivities. @ger_77, @luvteaching, @erewhon @luvteaching It is a bit of a nippy start to the day here in mid-Michigan. We never did get any of that wintry mix they said we were getting yesterday. Yesterday afternoon turned into a beautiful day. Today is supposed to warm to the mid 60s and have plentiful sunshine. Sue and I are heading to Clare for dinner at the Doherty Hotel. They put on a fantastic buffet. That also puts her half way to the rental and work tomorrow morning. The next time she'll be down here will be with the moving truck to make it permanent. I know many of you are having the traditional Easter Ham. @kazu Jacqui, I'm glad to see you are treating yourself to a good meal today and I'm sure your neighbor will appreciate what you share with her. The shrimp dinner for today's meal does look quite tempting. I'm going to have to file this one away for the future.   11. Good morning, everyone! Yesterday was a beautiful day and today it is threatening a wintry mix. I guess I do my walking indoors. This afternoon is supposed to be better. Nothing on the agenda except to go to Peel and Pare and get more of our favorite coffee. We spent part of yesterday surveying the yard and trying to figure out what was coming up in various places. Then, we were trying to decide what should go where. It can be a side dish or you can add some protein to it to make it a main dish. Your choice!   12. You are remembering correctly, Sharon. The tour I did was Walk on the Ocean Floor out of Halifax. It was a bus ride up to Burntcoat point and when the tide is out you can walk down onto the ocean floor. You can go out quite far, but you need to keep an eye on the tide as it comes in quickly. It was a phenomenal experience and I'm doing it again with Sister Sue this summer.

  17. Thank you for the explanation of the food traditions associated with Passover. Food is so much more than sustenance - it is strongly a part of culture and knowing those cultural traditions makes us so much richer. I keep forgetting to mention: Michigan accepted my tax return, so there is no arrest imminent No need for a Go Fund Me for bail money at this point. I will keep you posted!

We had a few thunder bumpers that woke me up during the night. I just heard the first crack of thunder for the morning. Today's meal will be a big surprise to many. It is the Vietnamese version of a sub sandwich. In Vietnamese cuisine, bánh mì or banh mi is a short baguette with thin, crisp crust and soft, airy texture. It is often split lengthwise and filled with savory ingredients like a submarine sandwich and served as a meal, called bánh mì thịt.   19. Well, the tax preparation company said it was ok. The thing is, you just put in figures and don't know if you've filled out the correct schedules until you're done. Oh, well. I figure Michigan will give me time to make corrections. Never sunny side up. The white over the yolk isn't cooked! They have to be flipped to do that or basted.
  20. Oh, don't get me wrong. The white has to be cooked hard. The yolk had better be runny! Toast is worthless if the yolk isn't runny! My federal return and my Ohio return have been accepted, but my Michigan one is still in limbo. That was one convoluted, complicated mess. They are probably coming to arrest me.
  21. I'm sorry to hear Henry has Covid. I hope it is a short, mild case. Your news is so much better. Keep up the good work on the kidneys! I was laughing at all the comments about runny eggs. I have to have the whites completely cooked. If they aren't, I won't eat them. So, I am in the group that may pre-cook the eggs. The other idea is to baste the tops of the eggs in the juice and put a lid on for a minute or two.

Shakshouka is a Maghrebi dish of eggs poached in a sauce of tomatoes, olive oil, peppers, onion and garlic, commonly spiced with cumin, paprika and cayenne pepper. According to Joan Nathan, shakshouka originated in Ottoman North Africa in the mid-16th century after tomatoes were introduced to the region by Hernán Cortés as part of the Columbian exchange. Many variations of the basic sauce are possible, varying in spice and sweetness. Some cooks add preserved lemon, salty sheep milk cheeses, olives, harissa or a spicy sausage such as chorizo or merguez.
