  1. Good morning, everyone! It is a nice sunny day here in mid-Michigan with temps approaching 70F. Bad night last night and I tossed and turned from 2:30 am until 6:00 am when I got up. There used to be a beautiful Japanese maple tree near the corner of the house. I've seen it in pictures and our next door neighbor commented on it and how sad he was when the previous owners chopped it down. So, yesterday Sue and I went to the garden store and bought a replacement. It is now planted very close to where the old one used to be. We also have hanging baskets to help provide some color to our boring beige house. We have two fuschia and two with tiny petunias and one hanging bag. We want more of those. Today's agenda is a trip to the big box store and tonight we're going to grand nephew Samson's t-ball game. Today's meal is a side dish, but a really tasty one. I will pass due to carbs, but the rest of you may enjoy it. Sweet potatoes aren't just for Thanksgiving! Our first recipe comes from The Food Network. https://www.foodnetwork.com/recipes/patrick-and-gina-neely/twice-baked-sweet-potatoes-recipe-1909560 This one from Ina Garten really caught my eye. They look so good! https://barefootcontessa.com/recipes/twice-baked-sweet-potatoes I think this one from the Pioneer Woman could easily be classified as dessert. Between the maple syrup and the brown sugar in the crumble, the sweet factor is sky high. https://www.thepioneerwoman.com/food-cooking/recipes/a41392653/twice-baked-sweet-potatoes-recipe/ I almost forgot! Wishing you all a fantastic day! @kazu Ivan is a handsome boy with his new haircut. Who could resist that face?
  2. Good morning, everyone! It looks like a nice day today in mid-Michigan. There are showers forecasted for tonight, but that's ok. We'll enjoy our morning walk and maybe do some yard work this afternoon. We ran a lot of errands yesterday and decided to never do that on a weekend again. There were way to many people out and about. The big thing is we did get Sue's tv up and running. We had to get a new Roku as none of the old ones worked. We couldn't get the remotes to pair with it and we also couldn't get the tv online for the streaming. But, all is well now! Now, I can watch my shows and she can watch hers. Today's meal is one I've had before. It is a nice change from regular chili. This first recipe makes a nice, creamy chili due to the cream cheese and half and half. https://www.thechunkychef.com/slow-cooker-creamy-white-chicken-chili/ The next recipe has a different spice blend. Use a rotisserie chicken for greater ease in making this recipe. I like the addition of lime and avocado. https://www.cookingclassy.com/white-chicken-chili/ Our last recipe is from the Food Network and it uses a broth rather than a cream liquid. If you're watching calories, this is the one for you. https://www.foodnetwork.com/recipes/patrick-and-gina-neely/white-chicken-chili-recipe-1922199 Wishing everyone a wonderful day!
  3. Good morning, everyone! I woke up this morning to a loud clap of thunder. I knew I wasn't going back to sleep, so up I got. Rain continues through the morning here in mid-Michigan, but the afternoon looks clear. River's soccer game was a lot of fun yesterday. She was so excited to see us. She is currently living with her other Grandma and I hope that arrangement stays as it is a much more stable environment for her. She is playing on a soccer team with her two aunts, twins, who are six months younger than she is. As they are only six, this is introductory soccer. They don't keep score and the "quarters" are only 5 minutes long. I think besides some basic soccer skills they are concentrating on what it means to be a team and sportsmanship. It did make for a long day as we had to leave by 6:30 am to meet them for breakfast and then head to the field. On the way home we stopped at a greenhouse and bought some hanging plants for the front porch. We've been having a lot of shrimp lately here on the Daily. Today's sounds pretty good to me. I love artichokes and pesto, so sure, let's put them together. This first recipe is not for those watching calories or carbs. Well, this dish is probably not for those watching calories or carbs. https://www.tasteofhome.com/recipes/pesto-shrimp-and-artichoke-linguine/ But it sure looks good, doesn't it? This next one is very similar. I bet you could make the sauce up in advance and just add the shrimp and cook the linguine when you want it. I wonder how it would go with spaghetti squash instead of linguine? https://www.homejobsbymom.com/best-pesto-pasta-recipe-creamy-shrimp-artichoke-pasta/ This one is a little different and got my attention. https://www.urbanfoodiekitchen.com/lemon-artichoke-pesto-shrimp-linguine/ If you're saturated with shrimp, you could always do this with chicken. Wishing you all a wonderful day!
  4. Hmmm, I think I know which treat you are talking about. I've had it and it is good. Well worth the splurge.
  5. Good morning, everyone! I am up early because we are heading north to see Sue's DGD's soccer game. It starts at 9 and we are meeting DGD and her other grandmother at a restaurant for breakfast in Reed City first. So, we'll need to be on the road by 6:30 am. Today's meal is definite comfort food. The version for today is meant to be done in a crock pot or slow cooker. But, you can always assemble it and put it in the oven. This recipe calls for pre-cooking the macaroni. There are some strange ingredients but also an assurance that it tastes wonderful. https://www.spendwithpennies.com/ultra-cream-mac-n-cheese-in-the-slow-cooker/ This next one uses cream cheese to achieve a creamy texture for the cheese sauce. https://www.themagicalslowcooker.com/slow-cooker-mac-and-cheese/ And this one is a contribution from Tricia Yearwood. https://www.foodnetwork.com/recipes/trisha-yearwood/crockpot-macaroni-and-cheese-recipe-2107509 So, tell us, what is your secret ingredient for mac and cheese? Wishing you all a wonderful day.
  6. Good morning, everyone! Warm thoughts and wishes sent for @cruzn single and @Vict0riann"s Pat for their surgeries today. Prayers that all goes well and recovery is swift. We really enjoyed the musical performance last night at the Center for the Arts. Morgan Toney is a gifted fiddle player! I don't know how I did it, but I scored seats in the middle of the second row. Talk about being up front! The hoagie/sub/grinder/hero debate is mainly limited to the east coast and Pennsylvania. There may be minute regional differences in preparation, but the terms really pertain to the same thing. Some things in life are simple: we know that two pieces of bread with stuff between them, for example, is a sandwich. Swap in a long roll, however, and things get a lot more complicated. Let’s start with the submarine, or sub. A sub is at least six inches long and is constructed with a combination of meat, cheese, fixings (lettuce, tomato, etc.), and dressing. It is usually served cold. According to Google Trends, the word “sub” is by far and away the most commonly used of today’s four large-sandwich terms. Pennsylvanians — Philadelphians, in particular — have their “hoagies.” A hoagie is just a sub — the Oxford English Dictionary literally defines it as a “submarine sandwich” — but the Pennsylvania folk have insisted on making it their own. According to Bon Appétit, the term likely comes from Depression-era jazz musician and sandwich-shop owner Al De Palma, who started calling his submarines “hoggies” because you “had to be a hog” to eat a sandwich that big. (So judgy!) “Hoggies” somehow morphed into “hoagies,” and you got yourself a regional sandwich term. You can read about this and also heros and grinders here: https://www.eater.com/2019/9/15/20866864/whats-the-difference-between-hero-sub-grinder-hoagie-sandwich If you liked the salmon with the strawberry relish, I am sure you'll like this dish as well. You could actually make up the strawberry relish and the citrus salsa and offer them both on the side. https://www.foodnetwork.com/recipes/giada-de-laurentiis/grilled-salmon-with-citrus-salsa-verde-recipe-1948970 This one actually roasts the salmon in the citrus salsa. https://wishbonekitchen.com/slow-roasted-salmon-with-citrus-salsa-verde/ This one uses oranges and limes instead of oranges and lemons. https://feelgoodfoodie.net/recipe/grilled-salmon/ Wishing you all a wonderful day!
  7. You are next to the Crow's Nest which will be quiet. It is a nice place for a cup of coffee or a drink and to enjoy the scenery from a warm, comfortable chair. The rest of the deck is an open deck that should not be a problem for you. You are above the spa and should have no noise issues there either. Some don't like cabins that are far forward, but you may be just fine. Relax and enjoy your cruise!
  8. I lived in Kent for 35 years and May 4th is always a solemn day. There is always a ceremony to commemorate the shootings and many from the community attend along with students and former students from all over. My friend, Brad, was a student at the time of the shootings and he attends every year. A few years after the shootings he was arrested for demonstrating when the university wanted to construct a gym over the area where the students were killed. And you sure can substitute chicken. You have earned a day of rest. You can't keep up this routine if you don't rest now and then. @ger_77 and @superoma I'm interested in the tomato pie recipe as well. I'm wondering if it is one of the following. I had these bookmarked. https://www.tasteofhome.com/recipes/rustic-tomato-pie/ https://www.southernliving.com/recipes/heirloom-tomato-pie The southern living recipe has good hints on how to keep the pie from being too soupy.
  9. Wishing you an absolutely fabulous cruise! I'm very happy you arrived safely and managed the airport madness. Airports are always a zoo, but once through them and at your destination, let the fun begin!
  10. Good morning, everyone! It is a beautiful sunny day here in mid-Michigan. At least for now. Sue continues to empty boxes and add to the donation pile. We'll probably take another load to donate today. Tonight we will be attending a performance by Morgan Toney from Nova Scotia at the Center for the Arts. He is a Mi'kmaq folk singer-songwriter and fiddler from Nova Scotia, Canada, whose music blends Celtic folk and traditional Mi'kmaq music. Thank you, @kazu Jacqui, for adding to our good news list this morning with your report from the surgeon and an update on the Ivan status. I sure hope the vet is pleased and I know you'll send him to be groomed if he passes the vet challenge. Can't wait to see him then! My sister's dog is some kind of doodle and she always looks really good right after being at the groomer. Today's meal is one that I would try with a substitution of cauliflower rice for the actual rice. I think you'll find it more fruity than spicy. The combination of fruity and savory will create an explosion of flavor. https://www.tasteofhome.com/recipes/caribbean-shrimp-rice-bowl/ This one uses pineapple and plantains along with jerk seasoned shrimp. You can control the spiciness by controlling the amount of jerk seasoning you add. It shouldn't be hot spicy although there is some pepper in the seasoning. https://www.eatingbirdfood.com/jerk-shrimp-bowls/ This one you can buy ready to assemble or you can do that yourself. You do need to scroll a bit to get to the recipe. https://www.eazypeazymealz.com/caribbean-shrimp-coconut-rice/ This last recipe is a copy cat of Bonefish Grill's Bang Bang Shrimp Bowl. It actually sounds really easy to make. You can substitute the cauliflower rice and other vegetables if you don't want the cabbage. https://domesticsuperhero.com/bang-bang-shrimp-rice-bowls-bonefish-grill-copycat/ Here's hoping the good news continues to roll in! Wishing you all a wonderful day!
  11. How thrilling we have such good news tonight! @Vict0riann Jumping for joy that Pat's scans were negative. Onward! Now, I hope that headache goes away. @RMLincoln great news about your DH's eyes. I, too, hope the surgery can get moved up. @St Pete Cruiser Very happy for you that you have been released from the hospital. I hope each day gets better and better. @CrabbyPatti That is a good report on your dad. I understand where you are with his care. I was the primary caregiver for my mom in Hospice. Bless you! I'm hoping that @kazu Jacqui and @cunnorl Charlene can add to the good news. @cruzn single Mary Kay, all the anticipation and anxiety about the surgery has to occur again. Darn! But the timing on Friday will certainly be better than today's time. We'll keep you in our thoughts.
  12. Credit score is not the only factor in the fee. The amount of down payment is and this only applies to federally backed mortgages.
  13. I think it is more of a realignment of the fees than a brand new fee. Here's an explanation. It does make your eyes roll back as it gets complicated. https://www.verifythis.com/article/news/verify/money-verify/verifying-what-mortgage-fee-changes-mean-people-good-credit-scores-fact-check/536-4ca9dc5a-c9d3-440c-ab43-9082b8e61cc1
  14. Good morning, everyone! It is supposed to be warmer today and I will welcome that! Today I have a pedicure and then we may go out to the nature center tonight for a guided walk. We'll see. Today's meal is a pass for me due to the carb count. Chickpea tuna is a vegetarian/vegan dish and there is no tuna in it. The chickpeas are mashed to give the appearance of tuna salad. For the vegan edition, you would need a vegan mayonnaise. You will basically make your regular tuna salad except you are using chickpeas and vegan mayo. Some call for the addition of chia seeds for the omega 3s. Tuna has them, chickpeas do not. https://simple-veganista.com/chickpea-of-sea-salad-sandwic/ This next one uses parsley and dill. https://www.thespruceeats.com/chickpea-tuna-salad-recipe-4844510 This one uses Greek yogurt and tahini instead of mayonnaise. https://feelgoodfoodie.net/recipe/chickpea-tuna-salad/ I hope you enjoy if you choose to make one of the recipes. I'm sticking with the real thing. Healing wishes sent to @cunnorl Charlene and @cruzn single Mary Kay. I hope the surgeries are successful and that both of you recover swiftly! Wishing you all a wonderful day!
  15. Good afternoon, everyone! We made all our donation trips today and left quite a bit in places. Sue is still filling donation bags and that is a good thing. Her bedroom is looking like a normal bedroom again. Now, the guest room and the art room need to be organized. We are 6 siblings and I am the eldest. We've had our ups and downs and we all have our quirks, but we have stayed close through the years. I know my mom was afraid we'd go our separate ways once she was gone, but we haven't. It has been great being back in Michigan in order to spend time with each of them. DB Bill and his wife are coming for dinner Friday for Cinco de Mayo. DB Jeff may join us. He's thinking it over. Jacqui @kazu I am glad that Ivan is acclimating to your home. My sister had a large dog (black lab/newfoundland mix) and he did well with others. When she would travel a lot she'd have me come and stay with him or her friend, Karen. Karen never gave him his pig's ears at night and he always lost weight when she was there, but he loved her and literally jumped with joy when he saw her. For those undergoing medical procedures and surgeries tomorrow, my well wishes for a successful outcome and rapid recovery.
  16. Good morning, everyone! It is a chilly start to a colder than normal day here in mid-Michigan. Temps are only getting up to the low 40s. And there is the possibility of an s word. Things improve tomorrow. As the weather forecaster said, we just have to suffer through today. We are going to spend the day taking things around to donation sites. Like @Cruzin Terri, I have been pruning my closets. I'm getting rid of the stuff that is too big for me. That is a hopeful thing. Once this adrenal issue is taken care of, I am hoping I can lose weight instead of gain it. So, I'm keeping the stuff that is just a little tight. Sue has been tossing stuff as she unpacks. She has a load for the resale shop. We give as much as we can to the resale shop that helps support a residence for victims of domestic abuse. Furniture, and we will have some, will go to Habitat for Humanity. We got to know these places well after Dad died. One step closer to restoring order. Today's meal is one I would like without the rice. I would use the riced cauliflower because otherwise the carb count is way too high for me. Remember, if you don't like Tilapia, you can always substitute another mild white fish. There are plenty! Use cod instead. This first one doesn't seem too spicy hot, just flavorful. https://www.tasteofhome.com/recipes/spicy-tilapia-rice-bowl/ If it is the heat you don't like, leave out the cayenne. I love the cayenne and many times people don't notice it if you use it sparingly. https://thebestblogrecipes.com/spicy-mexican-tilapia-bowls/ This last recipe sounded good with the pineapple added in. https://www.thesecretingredientis.com/blackened-tilapia-rice-bowls/ Wishing you all a wonderful day.
  17. Hugs and warm thoughts and caring feelings sent across the miles, especially for Tana and the teenager. The teenager needs lots of hugs. Thinking of you all and the struggles you are facing. @Cruzin Terri Your bathroom looks fabulous! I would love to have that shower. @dobiemom Hoping you get the A-OK report from your doctor.
  18. The Daily family has gotten large enough that we need a scorecard. Calling people by the wrong names is normal in a large family. My dad used to go down the list of names until he hit the right one. My sister did get a bit miffed the time he called her the dog's name. @St Pete Cruiser You have certainly been through the wringer. I am glad to hear that you are safely recuperating in the hospital and that the HAL medical did such a stellar job taking care of you. I hope you continue on your road to recovery and that it is complete.
