  1. Thank you for the comments. I've always done substitutions since back in college days when I made Kraft Macaroni and Cheese with just water because I didn't want to spend money on butter and milk. It wasn't good, but you could eat it. Most recipes can tolerate tweaking. Where you don't want to deviate is when baking. Baking is more of a chemistry experiment and you need the exact amounts of certain ingredients to get the rise or leavening that you want. But a dinner recipe doesn't require that precision. So, substitute away! I never add the carrots! Debbie graciously waited by going in search of Benedryl. Found it at the drugstore down the street from the hair salon. Then we went and had Cannoli and coffee before heading on to Paul Revere's house and t-shirt shopping.
  2. Thank you so much. We mostly had fish sticks as kids. In the mid-west it was hard to get fish in those days and choices were limited. Fortunately, we liked them. I did call Flight Ease this morning and all is taken care of. Delta now has our flights on their web page and we are set to go! @Seasick Sailor I sure hope you are feeling better soon.
  3. Good morning, everyone! It is supposed to be a nice day here in mid-Michigan with temps close to 60F and a fair amount of sun. I'll do my neighborhood walk instead of the gym. I save the gym for rainy days. Today is my walk, straightening out (hopefully) our flights for July, and a Zoom meeting at 3 pm. That sounds like enough for me. I may wander up to the wine store nearby and see if they have today's wine. Cod is a low-fat source of protein, making it an excellent choice for people who would like to reduce their fat intake and improve their heart health. Cod also contains a significant amount of iodine, which is an important mineral for thyroid function. Iodine helps your thyroid regulate hormones that control the body’s metabolism and cognitive function. Consuming enough iodine can help prevent problems like goiters, birth defects, and symptoms of hypothyroidism. Cod is an excellent source of: Vitamin B12 Niacin Phosphorus Selenium Omega-3 fatty acids Choline Iodine Today's meal is super easy as well as super healthy! It can be prepared as a sheet pan meal making it even easier for clean up. https://www.tasteofhome.com/recipes/cod-and-asparagus-bake/ You can use other vegetables in place of asparagus if you wish. This next recipe is similar but has slightly different seasonings. https://bellyfull.net/sheet-pan-cod-with-asparagus-and-cherry-tomatoes/ The garlic lemon caper sauce got my attention to this recipe. https://juliasalbum.com/baked-cod-and-asparagus-in-garlic-lemon-caper-sauce-in-foil/ And here's a slightly different version of the garlic lemon dish. https://www.eatwell101.com/garlic-butter-cod-asparagus-skillet-recipe For me it is either #3 or #4. How about you? We've been to Boston several times to embark on cruises and we'll be back this summer for our 32 days aboard ms. Zaandam. I'm not much of a dessert or sweets person, but when in Boston I have to go to Modern Pastry and get cannoli. Since the most I have it is once a year, I think it is ok to treat myself. The amount of walking I do to get it makes up for the sugar. Wishing you all a wonderful day.
  4. Thank you! I will call tomorrow. The last time this happened they really messed up the reservation. I was downgraded in class of service for 3 out of 4 segments, but the price stayed the same. Grrr.
  5. Good evening, I have my work cut out for me tomorrow. Our flights have disappeared from the airline website and when I figured out how to get into Flight Ease with the new arrangements, it said there was a schedule change and it was being processed or something like that. Well, that message sends danger signals. Last year processing went on for months. And then you end up with a lousy schedule. I'm calling tomorrow and will see what we can do. Otherwise, a nice day here. I did a 2 mile walk around the neighborhood this morning and then did a load of wash. Not much on the agenda.
  6. Good morning, everyone! It was a quiet night last night here in mid-Michigan. DB Bill and his wife came over for dinner and Farkle as he had to work Friday night. The storms were pretty strong where I used to live in Ohio. I checked on all my friends and they are ok and do have power. But, a lot of the city does not. There is a substation that must be repaired first and then they will get to the downed lines due to trees. What a mess down there! Not a lot on the agenda for today. Right now we have blue skies, so I will do my neighborhood walk. I may do an inspection of the grounds outside. We have some plants sprouting up, but I don't know what they are. We'll have to wait and see! Once we know what we have, we can start planning on what we want to have. Today's meal sounds interesting to me. I do like fish and cod is one of my favorites. I only found two recipes that really fit the description. Others were too far afield. This first one steams the cod and then uses the citrus coconut as a sauce. https://www.tasteofhome.com/recipes/citrus-coconut-steamed-cod/ In this next one, the fish is poached in the citrus coconut juice. I think that would make it more flavorful. You can use the cod or any mild flavored white fish that will take on the flavors of the citrus. https://www.myfoodom.com/product/citrus-coconut-white-fish/ I think I'd go with #2. Wishing you all a wonderful day.
  7. But, we'll be caring anyways. @ger_77 Bless you! We should all do something helpful for someone in the next week. Once you start, you get addicted.
  8. Rabbit, rabbit, white rabbit! Good morning, everyone! We had some wild thunderstorms last night. We can hear them clear as day in the living room and the dining room, but as soon as I go back to my bedroom I can't hear a thing. That was good for sleeping. Today I have a Zoom meeting in an hour, Sue and River are heading back north, and Farkle will be tonight because DB Bill had to work last night. Chicken tacos sound wonderful and I love avocados. Avocados are quite healthy for us. Read all about it here: https://www.medicalnewstoday.com/articles/270406#benefits This first recipe is pretty easy to make. https://www.tasteofhome.com/recipes/chicken-tacos-with-avocado-salsa/ Don't they look great? Mmmmm This next one can't get any easier to do. It marinates the chicken in lime and salt and makes a guacamole from the avocado. I do think I prefer my avocado in chunks, but I'd try this. https://mexicanfoodjournal.com/chicken-tacos-avocado-salsa/ One last version is found here. Lots of healthy options here. I'd use the low carb tortillas and fill them with the chicken and lots of veggies. https://healthyfitnessmeals.com/chicken-tacos-avocado-salsa/ We're having Claude Monet's stuffed onions tonight, but I'll keep this in mind for a later meal. Time to get ready to Zoom. Wishing you all a wonderful day.
  9. @Sharon in AZ and @Cruising-along I'm sure she'd enjoy that if it involves sugar. It is a struggle to get her to eat anything that might be remotely healthy. She zeros in on the sugar and then refuses the rest. So, I'm going to hold off on doing any thing that might enable that sugar addiction. My guess is that when she was with her step dad she got the sugar because it was easy for him and he didn't have to deal with 6 year old behavior. Poor thing has been through the wringer and bounced from house to house. She's currently living with her other Grandma. The other Grandma has twin daughters a few months younger than River and she herself is about 15 years younger than me. Better equipped for a 6 year old. We'll take her when we can, but we can't be full time.
  10. Good afternoon! Imitrex came to the rescue and Sue was up headache free rather quickly. So, we bundled up and went out to pick up DB Jeff, the birthday boy, for a trip to Meijer, Gordon's Food Service, and Target. A fun time was had by all. Last night's birthday celebration turned out well. All the siblings were there to celebrate. We couldn't let it pass since Jeff had delighted in reminding us for the last year that he was the only sibling that wasn't over 60 . Well, he is now! And we made sure he knew it. More of that today as well. He knows he's in for a year of that. His knee is coming along quite well now. He's graduated to the cane full time now that the PT convinced him it was a good move to make. We all had a good laugh over his text asking for the cane after the hard time he gave me about it. We came home for a coffee infusion and lunch and then we're back out running errands.
  11. Good morning, everyone! We have a hard rain this morning, but it is supposed to lighten up by noon. Sue went back to bed with a migraine and I am wondering what I need to do to entertain a 6 year old. She is really pretty good, but she is 6. @Seasick Sailor I hope you are feeling well shortly. Rest and hydrate. @RedneckBob I liked Butter Brickle as well. Today's meal sounds really interesting and I would like to try it, but it also looks like a lot of work. The picture of this first one looks like something I would like. https://www.epicurious.com/recipes/food/views/red-snapper-with-coconut-clam-broth Here is an adaptation of the above recipe with details on making the broth. https://blog.foodieinnewyork.com/home-main/2016/01/red-snapper-in-coconut-clam-broth This next one is a bit different with a pineapple salsa and the addition of turmeric to the broth. And, what is jaggery? Oh, jaggery makes this sound even better. It is a type of cane sugar where the molasses is not removed. https://scroll.in/food/962667/red-snapper-clams-bok-choy-and-coconut-turmeric-broth I think I would like this dish if it were prepared for me. So, if I see it on a menu, I will try it! Wishing you all a wonderful day.
  12. Good afternoon, everyone. @Suslor Oh, my on the health issues. But, thank you for sharing that. I mentioned it to my sister and cruising buddy and we both agreed that we are smart to be doing the cruises we really want to do now while we both seem relatively healthy. That can change on a dime, but we don't want to wait 5 years and find out we waited too long. We did take a walk in the park today. We have Sue's DGD, River, with us again this weekend. We took her to the Whiting Forest Canopy Walk and she had a ball. At first she didn't want to go up on it because it was too high and she was afraid, but she did it. She didn't want to go out on the ropes because she was afraid, but she did it! She didn't want to step on the glass floor because she was afraid, but she did it! Barely, but she did it. She didn't want to do the rope bridge because it was too scary, but she did it! All in all, a very successful day! Tonight is pizza for our DB's birthday.
  13. Good morning, everyone. Yesterday's snow has given way to blue skies and warmer temperatures today. We will enjoy! Happy Birthday to @Suslor and @cruzn single Happy Anniversary to @USN59-79 Today's meal gives us some ideas on what to do with all the leftover Easter Ham. This first one is easy and could be made with chicken for those who aren't ham fans. If you don't like asparagus, substitute broccoli. https://www.tasteofhome.com/recipes/asparagus-ham-dinner/ Mmmm good. In this next one the basics are the same, just some slightly different seasonings. https://amagicalmess.com/ham-pasta-skillet-dinner-recipe/ Whenever we have a family gathering, my niece is tasked with bringing the ham roll ups. They are lunch meat ham slices spread with cream cheese with a pickle or green onion rolled up in the center. Then she cuts them in bite sized pieces. This next recipe reminds me of Kourtney's ham roll ups, but on a dinner scale. This is what you do with leftover spiral cut ham. https://divadicucina.com/2014/06/06/recipe-asparagus-ham-rolls/ Wishing you all a wonderful day!
  14. Good morning, everyone! After my drain guy left yesterday, I spent the day doing laundry. I did several loads with no problem at all. Yippee! I may do more today just because I can. Today is back to the gym. I like to walk outside if the weather is good, but today is not one of those days. We're supposed to get snow, but only .3". It will be gone soon after it falls. I am happy I have the gym to fall back on. It looks like we're getting ready for Easter dinner with today's meal. The pineapple salsa sounds good, but I am not a ham fan. At least not a grocery store ham fan. They inject them with too much stuff that makes them rubbery to me. I staged my first ham revolt when I was 4. Here's a recipe calling for a ham steak for those smaller families these days folks. https://www.tasteofhome.com/recipes/ham-with-pineapple-salsa/ The slow cooker spiral sliced ham may be the way to go when making this for a crowd. I remember my mom and brother arguing about how you could or couldn't put pineapple slices on a spiral sliced ham. Pineapple salsa seems to solve that problem. https://www.fromachefskitchen.com/slow-cooker-honey-ham/ This recipe is quite different, calling for poaching the ham in a spice mixture and then finishing in the oven. It might be worth a try. https://www.goodhousekeeping.com/uk/food/recipes/a37849422/summer-spiced-ham-pineapple-salsa/ Wishing you all a wonderful day.
  15. With all the things we're not supposed to put down the drain, it makes you wonder why we even have them. Hair, lint, grease. The clog was in a part inside the house and not in the main sewer line. He looked at those and said all was fine there. Wonderful news! Thanks for letting us know.
  16. Drain specialist came and the drain is now working like a charm. Only put me back $125. I am rejoicing.
  17. Good morning, everyone! It is going to be a beautiful day here in mid-Michigan. The sun is out and the temps will be in the upper 40s. Looking forward to my walk! But, first the drain specialist is coming in a short while, so this has to be quick so I'm ready for him! Stuffed shells is a favorite of many. I generally skip them due to the carb content, but one shell wouldn't hurt. They are versatile and you can stuff with almost anything. Well, peanut butter might not be the best choice. They are creamy and smooth and so comforting. In this easy spinach and ricotta stuffed shells recipe, three cheeses combine with quick sauteed spinach, marinara sauce, and jumbo pasta shells for a hearty and comforting, crowd-pleasing vegetarian dinner. https://www.forkknifeswoon.com/spinach-and-ricotta-stuffed-shells/ Those look so good! These cheesy stuffed shells are the absolute best kind of comfort food. They’re loaded with a luxe combination of ricotta and mozzarella and a healthy dose of garlicky sautéed spinach, then baked in a bath of marinara sauce and melty cheese. Serve them with a simple green salad and your favorite Italian red, and you’ve got a dinner that’s sure to satisfy. https://www.thekitchn.com/spinach-stuffed-shells-23242112 The magic of a little freshly grated nutmeg is most pronounced in dairy, making stuffed shells a perfect occasion to use this special spice that rarely sees the light of day outside of baked goods and holiday drinks. This recipe stays pretty true to the classic bluepriint because sometimes simple is simply better. You can choose between Parmesan or pecorino cheese—both are delicious. If you want to switch up the regular mozzarella for some Fontina or caciocavallo, more power to you! https://www.delish.com/cooking/recipe-ideas/a37796304/stuffed-shells-with-spinach-recipe/ I hope one of these grabs your attention! Wishing you all a wonderful day.
  18. Mine from the Rotterdam last summer came with a place to attach to a lanyard.
  19. No apology needed for the rant. You needed to let it out and we were happy to be here for you.
  20. Thanks for the links to the excursion company. I'll keep that in mind when we start booking excursions for that cruise in 2025. I am just sick over the shooting at the Nashville school. How long will we allow this to continue? How many of our children are we willing to sacrifice? I always had a top loader and now have a front loader with the new house. I always left the top open before and now leave the door slightly ajar. So far no horrible odors from the washing machine. Just from the drain next to it. A little clorox took care of that odor. Drain specialist is coming tomorrow at 9:00 am. Apparently with the rain and rapid snow melt there are a lot of backed up drains.
  21. Good morning, everyone! It is supposed to be a nice day here in mid-Michigan with partly cloudy skies and temperatures in the high 40s. I plan to take advantage of that and get out for a walk. That depends on when I can get the plumber here to clean out the drain. When I was in college a roommate used to make sweet and sour meatballs for dinner occasionally. They were one of my favorite meals. I will pass on them now because of the sugar content. They can be made as an appetizer or as a meal. This first recipe is for an appetizer and it couldn't be easier. https://www.tablespoon.com/recipes/3-ingredient-sweet-and-sour-meatballs/0a8cdda2-b003-4043-b819-a0bb92d53cb8 This next one is more of a meal. Serve over rice or a rice substitute. https://lilluna.com/sweet-and-sour-meatballs/ That one does bring back memories. In this next one I would probably use the red and orange peppers for color. But, the green ones are a bit different. https://www.tasteofhome.com/recipes/easy-sweet-and-sour-meatballs/ This last recipe can either be an appetizer or a meal. I would add some veggies to make it a meal. https://ohsodelicioso.com/sweet-n-sour-meatballs/ I have been to Quebec a couple of times on a BHB, the last time just this past October. I stayed at the Frontenac and enjoyed a wonderful dinner out with @Sharon in AZ Sharon and her DH Craig. Wishing you all a wonderful day.
