Sounds good. I can really recommend Prospector's Pizzeria & Alehouse, opposite of McKinley Chalet Resort. They have over 49 beers on draft and excellent pizza.
The place is popular and can get crowded quick. They also have some outside seating.
It was fleet-wide. Available at the Salty Dog and sometimes with no upcharge in the MDRs. But the Ernesto is gone since restart.

After seeing your posted aerial image rendering and studying the updated deck plans, for me it looks like there is no more space for it. At least not for a Royal Class size sports court. Well, let's see.
Yes.
And these are the 2023 prices in Norway (example restaurant in Skarsvag, North Cape) :
750,- NOK is about 70 USD. Meal with sides, including tax. Fresh from the boat.
So way less expensive than in Alaska.
I'm pretty sure the menu from 2018 is outdated. Back then, there were no shortages and sky rocketing prices for Alaska King Crab. Don't think King Crab is on the menu now. Not for 30$ upcharge.
On the last sea day northbound Vancouver to Whitttier, you will enter Prince William Sound at around mid-afternoon. Some scenery to see here. The ship will then do scenic cruising at College Fjord / Harvard Glacier usually from 6PM to 8PM.
So untill mid-afternoon, there is not much to miss on the open sea passage.
That's not Glacier Bay, that is a Princess excursion available at Hubbard Glacier.

JourneyView shows all the events on the ship on the Apple/Android app, even before cruise. And yes, JourneyView is unreliable until about 1 week before the cruise. lol.
Ok, so you will stay at an airport hotel in LGA?
Yes, Princess offers transfers airport to ship. Give them a call.
If you are 4 or more pax, a private transfer could be less expensive.
Caribbean Princess will depart from Brooklyn Terminal on Aug 14th. https://nycruise.com/brooklyn-terminal/schedule-bct/
LGA to Brooklyn cruise terminal makes no sense if you fly in 2 days early.
Just look for a nice hotel in Manhattan.
I watched Marinetraffic yesterday, It looked like the Baranof Wind took the passengers. That's Glacier Bay's day cruise vessel, operation from Bartlet Cove. So most likely they were taken to Glacier Bay Lodge or Gustavus airport.
Edit: Your last photo shows the Baranof Wind. 😄
