Perfect idea. They would be experts in maximizing your experience. And they will get you there, and around in a timely manner, so that you don't waste any of your limited time.
Not sure why you feel the need to reserve an Uber...and certainly not if there is an extra charge. The only serious time I have heard recommendations for reserving Ubers is at very early hours...like you need to be picked up at 3am so you can make your 6am flight.
The much better place for your research would be the Celebrity board, here:

A "porthole veranda'? Is that a real name for a cabin category, or a sarcastic nickname? Doesn't sound very appealing, but I am not at all familiar with the cabin type.

Good way to search for your options.
Looks like LHR-ORD-FAI is one of your very few one stop options.
The port is a spread out area...the preferred entrance would depend on the dock. RCI is frequently at Terminal 18, at least for their monsters, which is pretty much in the middle of the port and equidistant from all the entrances.
If you look around the board, you will see the "where do I get euros" topic discussed here quite frequently. ATM in country, at a bank is the cheapest and safest. Don't fall for the "I got my euros for no fees at XXX in the US" because the exchange rate is usually terrible.
Most everything will be on your credit card. We didn't even use 200 euros on a 3 week land trip, eating lunch and dinner at cafes and restaurants very day.
Gee...didn't know that. Only lived here 66 years and sailed out of all of those ports.
The ships are paying for the power, so nothing really to rebate.
The point of my post is EVERYTING is more expensive in the US as opposed to Mexico, or any of the Caribbean ports. So this really isn't a fair comparison.
Seriously comparing US port taxes to Mexico? There isn't any obvious economic reason for higher taxes in the US? And Hawaii has 2 tender only ports...
Hopefully the board member with the great explanation of how port taxes are calculated will come along and explain them again.
