As Paul said it really depends on your spending and what you want to do. If you are going to put cash down on your account rather than a credit card the amount is more than sufficient (personally I would only put $500 on the account to start because you can't get it back until the cruise is over, at least not easily and add more as I went along) and NCL will notify you if more cash is required. So how much cash you need on your account depends on how much drinking and gambling you plan on doing and how many others you will have tied to your on board account (wife, kids etc).
