A few of the newer AmaWaterways ships accommodate 3 in a cabin, though I'm not sure if there is an age restriction on the 3rd (these are the ships used by Adventures by Disney part-time). I believe some of the Tauck suites and the Uniworld supership suites also accommodate a third passenger.

The German company Arosa has family cabins on two of their ships, Arosa Flora and ARosa Silva: https://www.a-rosa.de/en/river-cruises/my-a-rosa/brochures.html

AmaStella and AmaViola are supposed to have family-friendly cabins - according to a cruisecritic page and see post above - that accomodate more than three people. You can probably download the deck plans from the Amawaterways website.
