Port or Starboard for Hawaii sailing?

IMO, no - either side will be fine.  Enjoy your cruise.

The sail over and back is water all around. Even the sun on a balcony will alternate depending on direction.
While sailing Hawaiian waters you may be too far out to sea to see much, and docking is a toss up. 
Will you have scenic sailing of the Na Pali coast? That's the only thing that could make a difference, and for that I would want port side.

I totally agree with RuthC, with the added comment much sailing around the islands will be after dark.

 

As to Na Pali, the ship can sail around the island clockwise or counter clock wise, or even go part way and double back. So the side of the ship really doesn't matter.

If you mean the Eurodam Feb 20 to 9 Mar, sailing from Kailua Kona to Hilo you might see Kilauea lava flows on the port side ... but some ships have been known to do full 360 degree rotations to give both sides a look.

When we booked this for March 2020, our TA said we couldn't predict the correct side of the ship for the scenic sailing portion.  Depends on water conditions and lava flow.

 

With that said, when we did this from the California, we got an aft cabin the first time, and got to see either sunset or sunrise the whole way to the islands.  We got Ultimate Balcony Dining (Princess), and on the way out, we did it at breakfast.  The second time, we did it at Dinner in Oahu and saw mainly industrial.
