I made reservations on the 1st night of my cruise and am wondering if there will be seating that will allow for a view of the sunset.

what time your reservation is? You would have to check out where you will be and what time sunset is on the island you're on. It's not like the states.

can you make the reservation about  20 min AFTER the sun sets.

Depends on whether the steakhouse is located portside or starboard, which direction the ship is heading at the time, what time sunset is, and whether you will be near a window.

 

Find out what time the sun will set, go out on deck facing westward, and unless the weather doesn't cooperate, enjoy the sunset.  Make your dinner reservation for 30 minutes later than sunset.

The problem is the Carnival Valor sails from New Orleans. She must navigate the Mississippi River, which consists of turns, meaning you will not know exactly which direction your ship will be facing before, during and after sunset.

Didn't even think of the ship's direction, could be heading west towards the sun. I agree, he should go up on the deck and and enjoy the sunset and have a nice dinner

The last two times we ate at the steakhouse we had to ask the staff to lower the shades because the sun was too bright. Watching a sunset isn’t too much fun when it is blinding you on the way down.  Of course that depends where you are sitting and what direction the ship is cruising as others have mentioned.

Sunset is around 5 and I have a 5:30 reservation. So that should work out fine. It's not so much that I want to see the sunset while eating, I just don't want to miss the first one.

where is there a 5pm sunset, mid U.S. in the winter maybe. If you are sailing the Caribbean sunsets are almost the same year round, St Thomas 7:00pm in the summer and 5:45 in the winter.

 Yes, the sun does set early in the winter on the east coast.
