'Always menu' in Main dining: Strip steak replaced by sirloin steak

In the USA, a strip steak and a sirloin are very different cuts of meat.  

 

A strip steak comes from the short loin, near the ribs of the cow. It is in a protected spot so the muscle doesn’t get a lot of exercise.  It is a fairly well marbled and reasonably tender cut of meat that works best when grilled or pan seared.  
 

Sirloin is much tougher cut of meat that comes from the cow’s hip or rump.  It is often ground or used for stir-fry.  It is a much worse cut of meat than strip.  

 

I live in Kansas City and we often buy strips to grill and sirloin for ground beef.

I think that's correct.  (US) NY/kansas strip steak = (UK) Sirloin

and (US) Sirloin = (UK) rump 

Thanks for that, I was getting confused as a UK person.

 

Generally in terms of quality/price the UK goes 'generic steak' < rump < sirloin < ribeye < fillet.

 

Sometimes you can get tomahawks or other cuts, but the above the the standard selection you'd find in a supermarket.

My experience on Eclipse last month was that the everyday steak option was of acceptable quality and not excessively tough or fatty. Also cooked as ordered MR.

I am not a fan of the seasoning they use when cooking it though, too much Adobo for my taste.

Striploin and Sirloin are pretty much interchangeable terms although in the US I believe striploin refers to a cut from a specific section of the loin. Here in the UK they pretty much mean the same, and the ten sirloin is more commonly used.

In Canada strip ranks above sirloin'  However sirloin is considered a good oven roast.
