Casino chips

I'm curious how they handle chips on the roulette table post Covid. Do they sanitize them after each use? If not, what do they do. Do you wear a mask in the casino. We got a $300. free play. How does that work on the roulette table

You will need to wear a mask in the casino unless you are drinking. You can get chips for the free play at the casino cashers

IMO, you shouldn't have any greater concern with handling chips in a casino with Covid than before since Covid just doesn't normally transfer and infect on surfaces.  If you are that concerned now, where was the concern pre-Covid when touching things on a ship could be more of a concern.

I wouldn't think it would be of more concern than getting change back after making a purchase at a local store.  Who knows how many people handled that coin & currency before you?  At least on a cruise ship, the other passengers have been pre-screened for Covid - not so at your local store.  If you are that concerned, why not buy a small bottle of hand sanitizer to keep in your pocket and use it while in the casino?

On one of CCL's other lines, the dealer claimed that they were sanitized every day, but beyond that, nothing. One person was complaining that the chips were sticky when they were there right after opening, but that's hardly indicative either way. There's also plenty of sanitizer around.

Roulette would probably be the worst of the bunch since the chips are often swept away en masse, allowing for more cross contamination, but in absolute terms, still a marginal difference compared to other table games. I suppose technically you can minimize it by playing a denomination that other people aren't, so there's minimal commingling of chips, but that'll probably fall out of a lot of people's range of comfort.
