Actually, what's really good for mimosa's is a splash of either Aperol or Campari along with the OJ and champagne. Takes a lot of the uber-sweetness away, so you can drink more. Also try an Aperol Spritz, that was our go-to pre-dinner drink on our last Cheers cruise.

That's how I usually order my mimosas.  One day on Mardi Gras I was on a mimosa kick and tried all different flavors - pineapple, mango, peach, strawberry.  Then Bellinis at night.  Yum.
