How much is the excursion credit you receive with Have it All per person?

It’s $100 USD.  As Mary said, it depends on the length of your cruise.

Yes it is per person.   It is treated as a total amount per person so if one excursion is less than $100 the remainder carries over to be used on the next excursion

Hi Mafig!! :). Hal does this perk right imo. On NCLH, they give you $50 in each port for a single person and if you buy something that costs less than (example chair lift ticket) then you lose the remaining.  There are some things I think you will like very much with HAL. 🙂
