I did grad school at UT Austin. I was hoping they’d allow me to count English as my foreign language requirement.

Our group LOVED them! They were often a highlight of the meal. Gives the chef a chance to show off his creativity. “Strange” combinations often turn into delicious dishes - that’s one thing most chefs strive for.

I do like an amuse buche…A pity some can seem either just a ‘nothing’ or simply ‘odd’.

 

My favourite ever was once in the Mediterranean on Eclipse. In Murano the chef sent in a ‘tomato water and fennel’ one. It really looked like a spoonful of water with a tiny feather of fennel in it. Wow! What flavour, we were all stunned…It was like summer in a spoonful! We asked to sent our compliments to the chef. He came out and explained how it takes hours to concentrate and filter…A couple of cruises later we did ask in Murano if they were doing the tomato and fennel one but they didn’t know what we were talking about…

Yes. I've never had one that I didn't like and I appreciate the chef getting to go "off script" and do something they enjoy.

I had the DB duck Char Sui on the Eclipse.  It was OK but not stunning as I found it a bit salty rather than the umami I was expecting.

 

I enjoyed most of the amuse bouche we received.

I also found it very salty. It was delicious, but very salty.

We finished our Alaskan Cruise on the Edge last Saturday (our first cruise ever!). We loved the amuse bouche we were served, including my husband who is a very picky eater. We didn't try the Daniel Boulud entree or soup, but the Chocolate Pill was one of the most delicious desserts I've ever had! I ordered it repeatedly. ☺️ If you don't like the flavor of hazelnut you would not like the dessert.

That is the only thing worth ordering.   I always asked the servers and they would never approve or recommend anything else on that menu.    
 

You have to remember it from the main menu as it isn’t shown on the desert menu.   We overlooked it on many cruises because of that until one night the assistant server asked us if we ever tried it.   She suggested  it and we have been ordering it ever since.  A must do for any chocolate lover.  
 

That rest of the menu is as bad as the Kelly Hoppen designs.
