Easiest Way to See Available Cabins for your Cruise

You can try to do a mock booking as one method.  And if you go to the Celebrity UK site usually all of the inventory appears.

Ditto.  I do the same.  Mock booking via Celebrity web site with the Deck (vs. List) view.

I do all of the above. Lots of cabins become available after final payment. On upcoming cruise I booked prices dropped considerably and a room became available on the deck I wanted so no additional money due.  Just check often.
