The Seven Seas is the aft restaurant and has windows.  It is the "more formal" of the two and might have a trousers rule for dinner.  The Four Seasons is mid ships and has really cool chandeliers.  Both restaurants will have the same menu, so the difference is only in dress code (perhaps) and interior decoration.

While it might have been a one off, for us the aft service was lousy.  The other was great.  I think in large part to an officer in charge of the area.  I mentioned his name at the time but probably hardest working guy I've ever seen on NCL.
