latest date to cancel excursions

Can I still cancel an excursion and get a refund once on board.  I may find one of the trips I have booked to much for me but wont know until nearer time.

It depends on the type of excursion -- is it a flight (airplane or helicopter?)  They have their own cancellation deadlines.

In our experience things like coach trip can be cancelled up to 24 hours before, however, as cruisestitch says more specific tours can have different rules. Would your travel insurance cover you if you were not well enough on the day?

Often times less is more.  I think people often beat themselves up by trying to do too much on vacation.  Unless it is a bucket list item, I would cancel now and book it again onboard if I wanted to go.

*Shore Excursions can be cancelled or modified up to 24 hours prior to scheduled tour departure for a full refund. Excludes tours involving flights, trains, special events, overnight stays, hotel stays, Celebrity Exclusives, Multi-day Adventures and Private Journeys. These must be cancelled 30 days prior to sailing to avoid cancellation penalties.
