You can use it on any sea day. If the ship doesn't offer a sea day brunch, it can be used in the dining room for breakfast or lunch any day the dining room is open for those meals. When you buy a drink with your Sign & Sail, it charges you for the drink and immediately credits it out. You can certainly get a drink and give it to someone else. You could have billed it to the free drink if you wanted but would have had to pay the $1 overage. Since you had Cheers there would be no reason to do that though.
