BruceMuzz Posted June 28, 2023 #1 Share Posted June 28, 2023 We all know that there are thousands of different types and styles of Soy Sauce - known as "Shoyu" in Japanese 醤油. The characters translate as "fermented food oil". No mention of soybeans, but Shoyu is almost always made from fermented soybeans. Most Westerners know only the mass market commercial brands, which are pretty awful. I have been collecting and sampling different Soy Sauces for decades. My current favorite is Goyogura, a traditionally made Soy Sauce from Noda, Japan that is the favorite of the Japanese Imperial Family, What about you? As for ordinary light & dark soy, it's whatever is on offer at one of the supermarkets in Manchester's Chinatown. So, no sophistication there. But I have learned something from the OP - I had no idea there were so many different types and styles. I don't think there's any great variety on offer in those Chinatown shops. Seamus6 Posted August 29, 2023 #6 Share Posted August 29, 2023 I forgot the brand I usually get (they were out of it last time) but lately I have been using Tamari style soy sauce even though I am not gluten free. Most soy sauce is a blend based on soy and wheat where tamari is soy only. Even the kikoman tamari I have right now is pretty decent. As long as it isn't LaChoy...
