WHICH FORMAL NIGHT IS MORE "FORMAL"

Formal nights are pageantry by nature from the bygone era of dressing up onboard and nothing more. It's rarely enforced, just more or less "expected" cooperation from the guests to just dress nice at formal dinners.

The fact that someone is asking about Formal night and people are responding indicates that it isn't a "bygone era".  Just because some people would rather not partake does not take away from what it means to the people that enjoy it.

My understanding from some of the posts is that it is *optional*?  I usually wear dress shirt and slacks to dinner.  Would I be under dressed on formal night?

Nope, you would be between the extremes of attire typically seen on formal night.
