OK, so as @Frank12 mentioned, and I guess I can confirm as of last month, the new Sea Day Brunch menu is indeed still found on some ships - including the Elation.  Because the latest one in the link provided by @SNJCruisers is not what I remember - our menus looked like the one in my zydecocruiser link.  French toast with cereal coatings, etc.

It lists all of the dining venues available across the fleet and which ship they are located on and if you scroll past the grid certain meals and restaurants have a link to a PDF menu.

They do not tend to list hours of operation because this can vary itinerary to itinerary, even on the same ship. One year I had enough luck to sail the Pride 3 times (won 2 free cruises in the casino) and on 1 of the sailings (Bermuda) the seaday brunch ran from 9am till 2pm for seating, while the other 2 it was held at it's more accustomed hours of 8:30am-1:30pm. One of the 2 sailings that had the same seaday brunch operational times was a Journeys cruise and because of the 3 seadays down and the 3 seadays back the seaday brunch was alternated with the old way of having the MDR open for 2 hours separately for breakfast and lunch with individual menus.

Also for those that don't know if you want to attend the seaday brunch 2 twice in 1 day they will not turn you away. We routinely go at opening and order breakfast items and then again between noon and 1pm to order lunch items.

Of course I attended brunch.  That's the only way to get my complimentary bloody mary! It was definitely the old menu. I am very familiar with it.  I'll be on the Paradise again in September. Hopefully they'll have the new one by then.

Does anyone know if Fantasy offers sea day brunches too?  I'm only asking because the ship doesn't offer dive in movies, doesn't have an Alchemy bar...so I want to be prepared for this one too.

We got off of the Dream on Monday, was a four nighter, and there was brunch on both sea days with the new menu. My husband got an omelette and I got the eggs Benedict and we both got the cheesecake for dessert and it was all very good. 

 

We we ate at a table with a middle aged couple that were first time cruisers, and they ordered just about everything, they were so cute and wanted to try it all:). The waiter didn’t bat an eye and we had a very pleasant brunch with them. 

 

My husband was in shorts and a t shirt and so was just about everyone else....it’s Carnival and breakfast for heaven’s sake, if you want fancy you should book on Viking or Holland America, lol.

What does Inspiration currently have for brunch, particularly on my upcoming sailing: the old menu or the new menu?  

 

I like the new menu slightly better, because it has smoked salmon and gravlax.  But last time I cruised, the ships still had the old breakfast and lunch menus on sea days.  (Only breakfast on port days, same menu.)  So I'm looking forward to trying the brunch.

Great! They made a huge mistake with the pre made and including condiments people didn't want or like. Hope they changed it back fleet wide. Tomato spread on Pastrami, what were they thinking? Also, were they using a Panini press like the old deli or the toaster oven, which is not as good.

I've been on many Carnival cruises and some have 3 sea day brunches and some have a limit of 2 sea day brunches even if you have 5 sea days. The brunch usually lasts from about 8 or 9 AM to about 1 PM and do not miss it because in my opinion it is the best meal on the ship. It has a special menu and my favorite is the steak and eggs (filet mignon) but they have many more choices than the typical breakfast or lunch menu. My wife's favorite is the tomato soup and the macaroni and cheese along with a few other items.

I am looking forward to the new menu, hope it's on the Vista by Sept.  I noticed a greek yogurt parfait on the new menu.  HAL has something similar & is very good IMO.   Caramelized cheesecake--delicious, if you have enough room after all the other good selections.

The yogurt parfait was one of the best things my wife and I had on our cruise earlier this month. It was fantastic. It's also on the regular MDR breakfast menu, so you can order it every day.

 

Another really good breakfast item was the bruleed grapefruit. It was on the regular MDR breakfast menu, but not the brunch menu.

Ahh   thank you, bruleed grapefruit sounds good too.  Too many choices.

First time I read it I took it as Cheesecake and said "yum!" to myself, then I went back and re-read it properly as "Cheesesteak", an went, "Hmm, that could be interesting, maybe the onions are over-caramelized?..."

 

Gonna go look for cheesesteak sandwich recipes that have caramelized onions now...
