We did the UDP for the first time, this year on Symphony.  We got a great price, and I have no regrets.  HOWEVER, we did find CP150 to be a big disappointment!  Slow service, meh food.. we had initially booked to nights there, but changed our second reservation to Hooked, after the bad experience.

Just as a follow up and our experience with the UDP on our Allure cruise. We were never given any restrictions at any of the restaurants and never charged anything extra in any restaurant, including Izumi, with 2 proteins. For us, the service was the worst in Giovanni’s and it has always been our favorite. The restaurant wasn’t packed but the wait staff seemed overwhelmed and had trouble managing their tables. We probably enjoyed Izumi sushi for lunch and teppanyaki for dinner one night the most. It definitely seems they are expecting staff to do more with less these days. For us, the UDP was worth it.

We did UDP on Mariner in October. Never tried Playmakers but did go to Izumi, Chops (twice) and Jamie's. Never attempted multiple entrees because a regular 3 course meal was more than enough for our group. At the habatchi the server proactively told everyone that dining plans included two proteins.
