Where do people stay near Manhattan Cruise Port

There are literally thousands of hotels in midtown Manhattan near the pier for all sorts of budgets. A bit more info in what your budget is and what sort of things you are looking for in a hotel would be helpful.

In terms of parking, you will want to avoid parking in Manhattan at all costs. Garages can be $60-80 a night. Not sure where you are coming from but if you had the option to drop the car outside of the city and take the train in it would be better than trying to park in the city if parking at the pier is unavailable.

I don't know where you're getting your information from,  but there are no reservations taken for parking at the Manhattan Cruise Terminal so it certainly can't be "all booked". From the official port website:

https://www.nycruise.com/manhattan-terminal/parking/

"No Reservations

We do not accept reservations. Space is subject to availability and is provided to cruise parkers on a first come, first serve basis."

For hotel recommendations, as @princeton123211said, you need to tell us about your budget and other requirements before anyone can make a recommendation.

The OP has gotten some bad information. Parking reservations are not taken at the Manhattan Cruise terminal and they almost never have had to turn anyone away. It's only happened on very rare occasions in the height of the summer cruise season when a much larger than normal number of cruise lines are running cruises from NY.

OP is coming from NH into NY area, arriving one day earlier - question is what are their plans pre-cruise (sightseeing, dinner or perhaps just a good night sleep ??) as anything more specific (dates/day of the week) will help us come up with ideas on where to stay.

Parking in NYC is expensive plus a 19% tax, plus additional surcharge at most commercial & hotel parking in Manhattan for oversized vehicles, which can include SUV, 4WD/AWD lookalike, minivan, pickup truck, over-length, over-width & over-height ones - another $10 daily fee on top.  MCT is still, as noted, a flat daily rate of $40 per 24 hours, taxes & fees/etc. all inclusive - a relative "bargain" in comparison.

Driving in via I-95 is the most likely route northeast of NYC ... reasonable hotel with parking can be found in Fairfield Co/Stamford, CT area and a bit closer in, Westchester Co area, just north of NYC (haven't look at Yonkers lately) - where parking is free or maybe just a small daily charge - then, it's an easy 45 to 60 minutes drive direct to MCT, with roof-top paid parking at the pier.

As mentioned, stay anywhere.  Park your car that night using Icon Parking or Spot Hero or your favorite parking app to save money.  Park at the pier for your trip unless you can get a convenient deal on a parking app close to the port.  The port parking never fills up
