That't great information! Would Celebrity have something similar to Royal where Diamond/elite members get drink vouchers on celebrity as well? or is it only the designated happy hour?

They have a designated Happy Hour - I believe it is 5 - 8 PM each night except for embarkation and the night of the Captain's Reception.   Instead of a number of drinks of any type at any time,  qualifying Captains Club members can choose from the below selection of drinks.

Is this at any bar or a specific bar each sailing/dedicated happy hour bar?

Yes, it is a specialty restaurant with an extra charge.

on the Apex there was a cafe in Eden’s that was no extra charge for a light breakfast and lunch.

Yes Eden is open for breakfast & lunch free on Edge too--while it is quite good it is NOTHING like the wonderful specialty dinner. Ate at Eden on both ships. Very different menus & both fantastic.

The current CC HH is at most bars/lounges (World Class bar excluded) from 5 to 7:PM each evening except the first evening. Same as before the covid restart. The only difference now is the CC HH is no longer held in the Sky Lounge (M&S ships) with snacks. Unlimited drinks from 5 to 7:PM as before the restart.

Turns out we chose 2 connecting concierge class cabins on deck 12 on the starboard side. 2 bathrooms were the main consideration for this, although we rarely travel on celebrity and I would have liked my parents to experience the retreat for their first impression of X.

For Celebrity , yes a captain’s club happy hour is daily (except embarkation day) from 5-7pm, where you able to order beer, wine or mixed drinks from a limited list.

I think you can go to almost any bar on the ship during that happy hour timeframe to request a drink from the CC menu. Some folks pick up a drink and bring it to the dining room.

Also, if actively playing in the casino - free drinks are available.

There is also a CC daily light breakfast (usually in Tuscan) where you can order a mimosa or Bloody Mary or smoothies at N/C.

You may want to google Celebrity’s Captains Club perks to confirm the info I’ve provided as I don’t want to mislead you!

Sounds like you have an awesome cruise in the planning.

Even though it's only on a few ships, add Craft Social to the exclusion list

Why would Craft Social not be  included, they certainly serve some of the drinks listed on the CC menu.

The WCB does not, so I always thought that it was the reason that it was included.

Why is the the night of embarkation excluded?  Both our questions can only be answered by X.
