Royal Caribbean is a cruise line geared to families and so are their ships. They will never have any adult only ships under the RC brand. You are cruising on the the wrong cruise line if you expect more than the adults only Solarium.
App was discontinued a few years ago. The app worked well on a phone. Take your iPad if you want to access CC. . While I have the largest iPhone and can use the CC website on my iPhone in landscape mode in a pinch, it is a miserable experience. I only use my iPad or computer normally. I don't take my computer on a cruise so I bring my 11 inch iPad. Reasonably portable solution. Other solution is don't use CC on s cruise. Then you won't need to bring a tablet. My reason for bringing an iPad is to watch a few videos on flights. I could actually make do on my iPhones 6.7 inch screen but I am used to bringing the tablet.

No chance at all. You only get the category upgrade when you make your booking. You can't get it after booking. So too late now. The upgrade if the category is eligible is getting charged at the next lower category price. So in effect that would be a $20 to $50 lower fare.
iMessage does require internet. At one time passengers on some cruise lines were able to use iMessage, WhatsApp and FaceTime on some ships because the ships server was allowing those apps to connect to the internet over their WiFi even without a plan. In simple terms they were getting through because of the way the server was configured. The port they used had been left open. I don’t think it was on purpose but apparently it was not simple to close that port because other traffic used it. All the ships I have been on in recent times those apps don’t work. You can try iMessage or WhatsApp over the ships WiFi without a plan but they probably won’t work.
Listening to the squelch on walkie talkies through headphones can cause hearing loss. I had to carry a radio at work and they offered earphones but we researched it and found out they can cause hearing loss. As we always had to have the radio on while on duty we did not wear the earphones. We never had problem connecting like happens on ships because we had repeaters so that di minimize the squelch.
They certainly are not necessary and from overhearing people trying to using them they don't seem to be having an easy time connecting. Some are oblivious or don't care about being annoying. They only think about themselves. I feel the same about people using speakerphones in public. Why?
It could be anything from smooth to rough. It depends on weather fronts the can't be predicted in advance. Sea conditions can change from week to week. Even day to day. Best to pack some bonine or Dramamine just in case.
