Unfortunately inventories change far too frequently for there to be a definitive "wine list" on any ship right now.  Quite frequently you will pick out a wine only to be told: "We don't have that in stock, but we have something similar."  That said, ask at Vines if they have Caymus "Conundrum" White.  (There is both a Red and a White).  It is a wine that Princess has commonly carried and if they have it, it may very be what your wife is looking for.  It is a blend of Chardonnay, Muscadet, Sauvignon Blanc and Viognier and is usually vinted with a hint of residual sugar making it slightly sweet, but not to the level of a Sweet Wine (the proper term as opposed to "Dessert Wine.")

If you have Princess Plus or Premium  go to Vines and ask for small pours of all the wines of interest. It is essentially a free personal tasting. Pick your favourite. 
 

remember some wines may exceed what the package will cover, but also know you only pay the difference

Especially with the ship repositioning from Fort Lauderdale to Southampton.  They may have some inventory from Fort Lauderdale left for a few Southampton sailings, but once they run out, inevitably they won't be able to get all the same wines they did in Fort Lauderdale.

they don't have Publix 'BOGOs' in Southhampton?  what about Total Wines?

I thought that cruise lines were able to provision their ships with anything anywhere in the world - it is called logistics!

They're still blaming COVID supply chain disruptions.  They can't even get what's on their menus in US homeports.
