I agree that there is a lot of "corporate knowledge" for each cruise line, and often for specific ships. It is helpful to do a bit of research, but I still find that I have missed out on something special, or some helpful information. That said, I feel that complaining about having to remember your table number at a buffet is a bit petty. Hopefully you will find a cruise line/ship that better suits your needs. Safe travels.

If you are referring to the day prior, then it should not be a problem in Athens. Just let Guest Services know in advance. Generally just walk off (no luggage assistance available) and get a cab. If you are referring to debarkation day, then absolutely no problem, but once again - no luggage assistance will be available if it is before the "scheduled" times.

Last year I did a cruise from Trieste. Flew into VCE (from the USA) took a cab to the train station, then train to Trieste, then cab to hotel. 2 nights in hotel in Trieste prior to cruise. Lessons learned: 1. way too long a travel day/night/day - either fly into TRS or spend a night in Venice to recover, then travel to Trieste a day (or more) later 2. Trieste is a lovely city - definitely worth a visit for a day or 2 3. You can also take a bus, directly from VCE airport to Trieste - inexpensive and relatively convenient 4. as above, you can arrange for private transfer from VCE to trieste but it is $$$ Enjoy!

+1 on taxi or rideshare (Uber). Cruise line bus is typically the worst option, unless it is free (like the above poster) and you have PLENTY of time to spare.

I have connected in Montreal to a US flight. 75 minutes is "tight" but doable, especially with Global Entry. Not doable if you need wheelchair assistance. Bring your GE card, you may need it to access the GE line. If your inbound flight is delayed, you may miss your connection. Hopefully there are alternatives. Personally I would look for other options, but likely (hopefully) it will work out.
