Even when logged into my account, I have noticed this to be the case for at least the past year and a half.
It is a bit difficult as you have said!
"NCL regulars" would likely answer questions you might have about specific excursions on the PORT listings. I read the port posts anyway to get a feel for what sound the same as NCL's descriptions.
Or, you might look for Ship/Itinerary specific NCL posts in this forum and perhaps you'll find info you want. Trying using the "Search" feature (in the upper right hand corner of this page).

For port calls in Great Stirrup Cay and Harvest Caye, the promotion and $50 Shore Excursion Credit does not apply to equipment rentals.

Taking the credit as a payment directly to your card account is completed on the credit card sight.
Where it shows "Rewards" there is a link to View/Redeem, which will take you to another page.
There, you should see (to the right) a Redeem World Points bar. Use that and complete your submission.

SDP is not available on 1 and 2-day sailings; On 3-day sailings, SDP is for sale on day 1 only. No refunds available if not all meals are used. SDPs are personal (per person, e.g., 2 guests cannot share 1 SDP meal) and non-transferable (guests cannot give their SDP meals to someone else).
You were simply selecting a time to arrive at the port!
Your actual embarkation will be called in the terminal following the script that NCL gives to the port folks.
