In the US most cheese sticks (string cheese, cheddar) are refrigerated. Maybe they’re called differently down under?

If your cabin fridge is in a cabinet, keep the cabinet door ajar...they will cool MUCH better! They are "dorm cube" sort of fridges, so there i no freezer, which is what keeps your HOME fridge cool! But, string cheese will be fine for a few day in the dorm cube!

Can you, yes. But usually there is cheese available at the buffet for breakfast or lunch. We typically bring some of that back to our room along with crackers or bread to have available for late night snacking.
