Chris and I found a nice duck leg recipe to try; think I had mentioned that before. So this weekend we went for it. Crispy braised duck legs with mushroom ragout and fried Spätzle. Not a particularly complicated recipe, but some fussing and a LOT of dirty pots & pans. Oh well. I cooked the legs for about 20 minutes, skin-side down, to render the fat. Then they were braised in a low oven, in water with herbs and onions, for about 90 minutes. When done, I re-crisped the skin in the leftover duck fat. After cooking the Spätzle, they were tossed with butter then fried until slightly crispy. I wanted to make homemade Spätzle but I really didn't have time for that. Chris chopped oyster and cremini mushrooms, then sauteed them with shallots and wine for the ragout. The braising liquid got mixed with butter and flour to make a gravy-like sauce. https://www.foodandwine.com/recipes/braised-duck-legs-spaetzle-and-mushroom-ragout The wine choice was superb. The recipe called for a fruity German Pinot Noir which I didn't have, but this slightly-aged Cab Franc made at a winery founded by a German was a great substitute. It still had some youthful fruitiness and went with the meal wonderfully. Now another week of work. Yuck. At least I have some leftover pasta for lunch - with capers, bacon, and mint. Only 12 miles from home but it was a lovely little break. Nice room with a view of the whole of Llandudno bay and the pier. Compulsory holiday Ice Cream. Dinner out at a "New York bar and grill" (no obligatory holiday lobster though) and several cocktails in the Tapas Bar. It rings so true, and at present those in charge have got their knickers in a twist (panties in a wad) about the whole thing, just to make things even lovelier. Davey, loved and envied your picture story of your night away - and the food and drink looks ideal, simple tasty though not exactly gourmet food, just what one craves in hard times. I have to have another endoscopy as a follow up and that is at the beginning of December.
