Yes, you can ask different sizes, including 2.  Do a mock booking on Princess and you will see the options available.  You can also have Princess cross-reference dining options among multiple reservations if traveling with others.

It’s been my experience that table size requests are not always provided. If not during embarkation the maître d’ or one of his head waiters will meet with passengers in a dining room to modify table assignments if possible.

If fixed seating you can request a table size in the cruise personlizer, but it isn't guaranteed. You should visit the maitre'd. There should times mentioned in the Princess Patter when you board. Show up early. There will be lines. For your information many of the two tops are spaced along a bench seat with tables spaced only a foot apart.

If you are in Club Class Dining tables for two are no problem.

If you are in Anytime Dining you have to request a table for two each evening when you arrive.

We had no trouble getting a table for 2. We did Club Class & only waited no more than 10 min. for any table the entire 15 day cruise.

Club class is 90% tables for 2 that's why. If you're a larger party they put two tables together if necessary  there are about 3-4 round tables for 4.  In the regular dining room there are very few tables for 2 but as previously suggested see the Maître'd upon boarding. Right now the chances of being seated with anyone outside your party are slim due to the covid restrictions so who knows how things will pan out when cruising resumes.

I agree & this statement in the Cruise Personalizer when making dining requests confirms your opinion:

 

“Dining options, seating times, menus, locations, and venues may vary. We will do our best to accommodate your requested table size, although we cannot guarantee it”.

Club Class is not related to the general DR's. Seating is totally different.

Fair in a way, but they would never complete an evening dinner service if they cannot combine mixed parties at the larger tables. And we don't know what the Covid restrictions will be as right now there is no sailing and no final CDC guidelines.

We have not found this to be the case on Princess but we have not travelled widely on Princess ships.   

 

However it certainly was the case on many NCL ships in the past but our last cruise was after refurbishment on an NCL ship and they had removed the wall side bench seats.

On most Princess ships many of the 2-tops are close to the next one.

 

But what is worse is that often the wait staff will treat several of the tables near each other to be a large table for serving purposes. Thus you get the next course at the speed of the slowest eater in a group of tables.

When it comes to table sharing a lot will depend on whether the cruise lines go for 100% occupancy.  If they fill the ship to the same capacity as pre-covid era one would think they need to fill the tables as before.   In terms of sharing a table traditional dining is going to be less of a risk as anytime dining sharing as the latter would share with different passengers each night.

I would hope that when crusing restarts "properly" that vaccinations will continue to be compulsory, so that mixing with other pax will not be an issue.
