We had priority tendering (first tender) and it still took sometime. Probably best you allowed some extra time to get where you're going.
We go on this itinerary often and tendering time can and does vary.
For many years we have sailed in the JS (tub/shower combo being the reason). Last few years since retirement we now sail in (depending on RCI ship) the GS and more than likely the OS and have gotten some really good prices on them.
We actually spend time in our cabin (done with the nightlife onboard) and so having it be more like a hotel room works best for us now.
After you exit your tender and as you walk along the marina (on your right) when you come to a display of surfboards (standing upright) on your left walk just behind them to the street is where you'll find taxi cabs. USD will be fine to use...just know the price before you get in. Sorry no idea how much that will be. Hopefully someone else might and post for you.

We'll also be there. No plans other than to enjoy the town as we've also done excursions there on our past port stops. Not really concerned about it being "jammed" on this particular day.
We always take a shared taxi (they fill up fast and usually hold about 8 people) from the taxi stand when going to Maho. $12.00pp round trip but we have them drop us off in town and water taxi back.
We have a taxi driver take us to the end of the Malecon (by the bridge) and walk back then take a taxi back to the port. $5.00 pp that's cheap enough for us. We used to take the bus but now it seems sooo crowded.

If you use a vendor it will be based on a timeframe they will give you at each stop. Once you return you'll have plenty of time to walk around Sitka before taking the ship shuttle back to the port.
We usually stay at Hyatt Place (convention center) next to the Harbor Shopping center. A Publix market and shop[ and our favorite place to eat is Duffy's. Check pricing directly as a member with Hyatt or use ValueTrips.
Just at these port stops in January and all took USD. We've cruised the Mexican Riviera many times over the years and have always used USD for the small purchases we make.
